i’m so proud of my vegetable use this past week. It involved more than simple salads!
My latest concoction was a spinach chickpea burger. Which was rather simple and pretty darn tasty.
Ingredients for 5 patties:
1 garlic scape (could also use regular garlic)
cumin, salt, pepper
5 oz spinach
1 1/2 cups of chickpeas
juice of half a lemon
1 large egg
1/3 cup of oat flour
Heat the oil over medium heat, add in scapes and cumin to infuse the oil.
Add in spinach, toss until sufficiently wilted. Allow to cool until you are able to handle. Then cut into fine pieces.
Meanwhile in a blender or food processor combine all but 1/4 cup of chickpeas with lemon juice and egg and blend until the consistency of thick hummus.
In a separate bowl combine remaining chickpeas with spinach and mash with potato masher.
Add in the blended ingredients. Add salt, pepper, and flour. If mixture is too wet add more flour, if too dry add a splash of water.
Form into patties and brown in oil on both sides, about 6-10 minutes total. Then place into a 350* over for an additional 12-15 minutes.
***Note if pan is not oven proof you can wrap the handle with foil and you should be good to go.
