Only 6 more weeks until the 2012 CSA comes to an end, what will I do!  This year I’ve been rather good about making use of all my produce and am not looking forward to returning to the grocery store.

For that reason I’m also trying to get a few things into the freezer and canned so I can extend their life and use for sometime.  Yesterday morning and last night I roasted a pumpkin, acorn squash, butternut squash, and 3 carnival squashes.  Also attempted to roast pumpkin seeds but I forgot about them and they burned…oopps!

With the squash and one of the carnival squashes I made a soup, half of which I froze.

Other fall inspired meals of late, roasted acorn squash with sauteed kale.
