Dinner-again inspired by season produce and Thai flavors.

I made a green sauce using winter squash that was roasted and then blended into a puree to which I added basil, and coconut milk until smooth.  I then added cumin and curry powder and half a jalapeno pepper.

Meanwhile I dried and cut up a block of firm tofu and a head of broccoli which I steamed and then threw into a saute pan with the green sauce.


Served over brown rice, and viola a quick and delicious dinner.

One more day until Friday, wahoo! This has been a productive BUT long week, looking forward to a nice weekend.
