After having a rather large afternoon snack one day last week I was looking for a light dinner. There were several vegetables in the refrigerator including brussels sprouts and so I immediately thought of a shaved salad.
Brussels Sprouts Salad (serves 4)
-about 20 ping pong sized brussels sprouts
-3 heads of radishes
-half a medium red onion
-1/2 kohlrabi (could make without)
-honey to taste (start with a teaspoon)
-1 tablespoon olive oil
-salt and pepper
Cut the sprouts into fine shreds (could shred but I think that’s more work than it’s worth), shred the carrot and kohlrabi, cut the radish and onion finely. Set aside. For the dressing mix the lemon, honey, olive oil, and salt and pepper. Toss with the vegetables and voila!
