Happy April 1st and with it spring looks like it has arrived, yes!!

Weekly meal highlights…

Chicken, vegetables, and rice.

An amazingly easy dish of sauteed shrimp and scallops atop a mint pea puree.

And a lovely Easter dinner with an asparagus, goat cheese salad,

and a parmesan crusted chicken breast with a mushroom and parsley salad.

For dessert a 7up cake!  All thanks to Ryan because I’ve been pretty much glued to my computer, one more week until I submit my thesis, ekk!!

After dinner we watched the walking dead season finale, and dyed Easter eggs!  I haven’t done that in forever :).
