It’s funny how ones taste change over time. I for one used to hate ginger, well at least raw, but now I love it in all shapes in forms, from tea to vegetable stir-fries to sushi toppings.
Last week we made some ginger infused simple syrup using a large chunk of ginger, 1 part sugar, 1 part water and boil down until the volume reduces by half.
Once cooled we poured our syrup into an old bottle and capped it with a spout we bought at a kitchen supply store.
Mixed with seltzer, and voila, homemade ginger ale. For this particular drink I actually added the juice of 1/2 a large lemon to make a ginger lemonade, so delicious!
